Thai shrimp salad (PLAKUNG)



INGREDIENTS: (for servings)

½ cup Fresh lemon 1 lb Shirmp
Grass,sliced thin ¼ cup shallot,thinly sliced
4-5 Kaffir lime leaves, ¼ cup Young ginger,julienne
Sliced very thin

DRESSING : 3 tbsp Lime juice , 4tbsp Fish sauce , 2tbsp Sugar,
6 thinly sliced Fresh spur chilies

GARNISHES : Lettuce, Mint leaves

1. Peel the shrimps and clean well. Blanch the shrimps in boiling
Water until just done and soak them in cold water to stop them
Them from over cooking , drain and put aside.
2. Toss the shrimps and salad ingredients with the dressing .
Mix all herbs well and spoon this salad onto a platter lined
With fresh lettuce leaves. Decorate the dish with fresh mint
leaves
